8 Recipes to Transition You (Gently) Out of Summer and Into Fall

Well folks, despite the insanity of 2020 and the long hours spent at home, this year has actually flown by. To think we are in the very last week of August is a little mind-blowing! If you are lucky enough to live in an area of the country that has some sort of a fall, you’ll be welcoming in the new season soon. Living in Los Angeles means we have another month, at least, of hot weather. We won’t be truly welcoming in heavier sweaters and chillier temps until the end of October, early November. We find ourselves in this weird summer/fall in between, where we’re done with the heat, but also not totally ready to let go of summer. We’re ready to embrace the cooler temperatures and holiday festivities, but also not ready to let go of the long summer nights. So, to help our transition out of one season into another, what better way than to EAT. And what’s easier than chopping some stuff up and throwing it into the Instapot? Ok, it might involve more than just chopping and throwing but it’s easy and after all these COVID ups and downs: Easy. Is. Good. You could never deny the Fall like qualities of Butternut Squash. This may be one of my all time favorite recipes, with a prep and cook time of under 30 minutes and only 100 calories. I have a habit of eating progressively worst as the fall season seeps into the holiday season, so a delicious and healthy recipe like this is perfect. Topped with bacon crumbles and cheddar cheese and all my fall dreams have come true.

Whole Rotisserie Chicken

I’m extremely guilty of buying the whole Rotisserie chicken already made at the grocery store, more times than I’d like to admit. The idea of roasting an entire chicken seemed a little daunting to me. If your stomach can handle rubbing a raw bird with spices, you’ll love how easy this is. Total prep and cook time under 45 minutes for an incredibly flavorful and juicy chicken and a house smelling delicious.
